• Lees are lightly stirred every three to four weeks
The soil is made of silt and clay/sand on top of tuffeau from the middle of the Turonian period
everything is done by gravity and without racking
Fermentation is with native yeasts and split between stainless steel (about 70%) and seasoned oak (old 228-L barrels plus a few 600-L foudres)
