2023 Saisons Savigny-les-Beaune, Burgundy, France Zalto Apiaries in IthacaTerroir: From "Dessus Les Vermots," located at 320 meters' altitude on rocky, white soils. Southwestern exposure. Viticulture: Biodynamic (not certified) Vinification: Whole cluster fermentation, indigenous yeasts, minimal punch downs (by feet only) and pump overs (with bucket), aged 12 months in older barrels and 4 months in stainless steel tank, minimal total SO2, no fining, no filtration.
