From Jobard "this is a fermage from Domaine Mussy in Pommard that I bought in August 2019

followed by an extended barrel élevage of roughly 12 months with minimal new oak

and plenty in between

2024 Domaine des Sablonnettes Trempette, Vin de France Lillian the L’Ermot vineyard was blendedChardonnay Chenin Blanc Sauvignon Blanc from biodynamically cultivated vines in the Cteaux du Layon. Grapes are directly pressed to create a white juice. Whole clusters of Chardonnay Chenin Blanc Sauvignon Blanc are thrown in to macerate infuse (flotation method) for 1 2 weeks before pressing (ergo the cuve's name 'dip' as in to take a dip). Spontaneous fermentation and aging in tank prior to bottling unfined, unfiltered, no additional SO2.
