2021 Elise Bougy Les Coullemets Blanc de Blancs Grand Cru Brut Nature, Champagne, France Bichi Production is approximately 6000 bottlesFrom the bottom of the village of Le Mesnil Sur Oger, pure chalk. Viticulture: Organic (Ecocert, 2022), biodynamic methods (since 2021). Vinification: Ambient yeast primary fermentation and full malolactic conversion, aged for 15 months in 600 L barrels, bottled and aged further on lattes under natural cork, no fining, no filtration, no added SO2.
