Fermented with native yeasts in stainless steel tanks, the wine then undergoes traditional secondary fermentation in bottle. It spends approximately 30 months on lees, resulting in refined mousse and texture. Bottled unfined and unfiltered (2 g L dosage, Extra Brut).
